Cookadelic.

Earlier today I decided that it was going to be cold tonight. And since we don’t ever really run the heater, it was a good time to cook something in the oven. One of my favorite dishes is the Spanish Rice that my mom makes. It’s really a modified recipe that came from my Great Grandfather (My Mom and her Brother’s called him Papa). After getting some pointers from my Mom, I headed over to S&S and purchased myself a bunch of fine organic ingredients.

The cooking process went pretty much A-OK. Except, I did get a little caught up in browning the rice and forgot to slice up the chicken. Only a minor delay. The other problem was that I opted for brown rice instead of white rice. After cooking for an hour I had rice that was al dente…. No, make that tough. So I threw it in the oven for anther 20 minutes. What came out was still slightly al dente, but hunger took precedence. My pasta preference is al dente, so why shouldn’t my rice be cooked the same.

Now I have gobs of leftovers.
